🌽 my favorite way to eat corn


Hi Reader,

While I do love corn on the cob, sometimes I go the extra step to turn it into one of my favorite summer dishes.

Mediterranean-inspired Tomato Cucumber Corn Salad is simple yet loaded with flavor.

Featuring sweet onions and fresh basil, I love making it with grilled corn.

But don't worry if you can't get fresh corn where you live.

It's also fantastic with defrosted frozen corn.

This salad is perfect for summer picnics and backyard barbecues, and I also enjoy making a batch to enjoy for lunches during the week.
